Ingredients for Szechuan BBQ Carrots

Rainbow Carrots 2 pounds

Hoison Sauce 1 cup

Oyster Sauce 1/2 cup

Spicy Chili Crisps 2 Tablespoons

Honey 1 cup

Ginger minced 2 T

Worcestershire 3 cups

Scallions 1 bunch for garnish

Toasted Sesame Seeds for garnish

Preparation of Szechuan BBQ Carrots

To make this recipe super simple, start by measuring all your ingredients out in an organized fashion. 

Once everything is measured add it all to a blender except the carrots, ginger, and scallion. Blend it until smooth. 

For the sauce the only item that needs to be cooked before mixing is the ginger. Start by peeling and dicing 2 tablespoons of fresh ginger. In a small pot add the diced ginger and cover it with neutral oil or olive oil is fine. Cook over low heat for five minutes. Then it is ready to be added to the rest of the sauce. 

Tip: Wash your carrots thoroughly and don’t peel them to reduce waste. The skin of carrots are completely edible. 

Cooking Process

After everything is measured and your sauce is blended you can cook the carrots. 

Preheat your oven to 350 degrees Fahrenheit.

After washing the carrots chop off the tops and bottoms of the carrots and then cut them in half so they are about 4 to 5 inches long. If the carrots are extra thick cut them in half lengthwise. Otherwise leave them whole. 

Cook the carrots in the oven until they are fork tender, approximately 20-25 minutes. 

When the carrots are cooked through place them carefully into a sauce pan and add your BBQ sauce with the cooked ginger. Cook everything together on medium heat for 3-4 minutes until the sauce coats the carrots evenly. 

Place the carrots on your preferred serving dish top with fresh cut scallions and toasted sesame and you’re ready to dig in.
